Last night was a girls' night in--Mexican style--complete with a homemade casserole, guacamole...and margaritas!

We layered a casserole dish with rice, tomatoes, black beans, tomato sauce, sweet onions, yellow peppers and topped with cheese, garlic powder, ground pepper and cumin. Then, we placed the dish in the oven on 350 degrees for 30 minutes.


While the casserole was baking, we created some guac as an appetizer. Dilemma: The avocados were hard and barely ripe. Solution: Using a cheese grater, we were able to mashed up the avocados. Outcome: Deliciousness!

The meal was palate pleasing!
